Admittedly, due to the long cooking time, we recommend preparing it at home, but either way: Nothing beats a warming soup after winter outdoor adventures!

Chance that your camping neighbor will come over for dinner : a supper is always possible!

You need this:

  • 1 white onion
  • 2 cloves of garlic
  • 2 stalks of celery
  • 3 carrots
  • 150g green beans
  • 1 can of cannellini beans
  • 1 can chopped tomatoes
  • 500ml vegetable broth
  • 150g soup noodles
  • 2 tbsp tomato puree
  • Parmesan
  • olive oil
  • Salt pepper
  • some lemon

This is what you have to do:

Step 1:
olive oil, 1 onion, 2 cloves of garlic

Heat olive oil in a pot, sauté onions until translucent, then add garlic and fry for 5 minutes.

Step 2:
2 stalks of celery, 3 carrots, 2 tablespoons of tomato puree
Cut the celery and carrots into small pieces, add them to the pot and fry for 2 minutes. Then add tomato puree and fry for another minute.
Step 3:
150g green beans, 1 can of chopped tomatoes, 1 can of cannellini beans, 500 ml vegetable stock, 150g soup noodles

Add green beans, chopped tomatoes, cannellini beans and vegetable broth to the sautéed vegetables and simmer the soup for 15 - 20 minutes. Add the soup noodles in the last 5 minutes.

Step 4:
Salt, pepper, parmesan, lemon

Season the minestrone with salt and pepper, serve with Parmesan and, if you like, a little lemon juice.
