Admittedly, due to the long cooking time, it is advisable to prepare it at home, but either way: nothing beats a warming soup after winter outdoor adventures!

Chance that your camping neighbor will come over to eat : A supper is always possible!

You need this:

  • 1 white onion
  • 2 cloves of garlic
  • 2 sticks of celery
  • 3 carrots
  • 150g green beans
  • 1 can of cannellini beans
  • 1 can of chopped tomatoes
  • 500ml vegetable broth
  • 150g soup noodles
  • 2 tbsp tomato puree
  • Parmesan
  • olive oil
  • Salt pepper
  • some lemon

You have to do this:

Step 1:
olive oil, 1 onion, 2 cloves of garlic

Heat the olive oil in a saucepan, sauté the onions until translucent, then add the garlic and sauté for 5 minutes.

Step 2:
2 sticks of celery, 3 carrots, 2 tablespoons of tomato puree
Cut the celery and carrots into small pieces, also add to the pot and sauté for 2 minutes. Then add the tomato puree and sauté for another minute.
Step 3:
150g green beans, 1 can chopped tomatoes, 1 can cannellini beans, 500ml vegetable stock, 150g soup noodles

Add the green beans, chopped tomatoes, cannellini beans, and vegetable stock to the sautéed vegetables and simmer for 15-20 minutes. Add the soup noodles in the last 5 minutes.

Step 4:
Salt, Pepper, Parmesan, Lemon

Season the minestrone with salt and pepper, serve with Parmesan and a little lemon juice, if you like.
